Ingredients List

  • 1 lb grass-fed ground beef
  • 1 small yellow onion, chopped
  • 1 garlic clove, minced
  • ½ c flat leaf parsley, finely chopped
  • 1 large egg, lightly beaten
  • ¼ c flaxseed
  • ¼ c almond meal
  • 2/3 c organic tomato paste
  • 1 tsp sea salt
  • ½ tsp pepper

Cooking Directions

Preheat oven 375 degrees F. In a medium bowl, combine onion, garlic, parsley, egg, and half of the tomato paste. Add breadcrumbs and beef. Season with salt and pepper. Mix until well combined. Place mixture in a 6 cup capacity loaf pan (8 in x 14 in).  Bake meatloaf for 50 minutes. Remove from oven; brush with remaining tomato paste. Return to the oven; bake until an instant-read thermometer inserted into the center of the loaf reads 160 degrees F, approximately 10-20 minutes. Cool meatloaf for 10 minutes in the pan before slicing.
